  • 3 tbsp granulated sugar
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 6 oz cream cheese, cold
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction from above
  • 1/4 cup granulated sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare Apple Cider Reduction: Simmer apple cider in a saucepan over medium heat until reduced by half. Cool before using.
  2. Make the Cheesecake Filling: Beat together cold cream cheese, granulated sugar, vanilla extract, and apple cider reduction until smooth.
  3. Mix the Cookie Dough: In a separate bowl, cream softened butter with granulated and brown sugar. Add egg yolks and vanilla, mixing well.
  4. Combine Dry Ingredients: Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice in another bowl. Gradually add to wet mixture until just combined.
  5. Assemble Cookies: Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined sheets; indent each ball and fill with cheesecake mixture before topping with more dough.
  6. Bake: Bake for about 11 minutes or until edges are golden. Brush tops with melted butter and sprinkle with spiced sugar mix.
