  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and prepare a 9" square baking dish with butter and parchment paper.
  2. Boil apple cider in a pan until reduced by half (about 5 minutes). Add cold butter and whisk well.
  3. In a separate bowl, mix eggs, sugars, oil, sour cream, baking powder, cinnamon, and salt. Slowly add the boiled cider mixture.
  4. Stir in flour until just combined.
  5. Pour batter into the prepared dish and bake for 22-25 minutes until golden brown.
