  • 150 g unsalted butter (for crust)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (for streusel)
  • 50 g all-purpose flour
  • 50 g brown sugar (for streusel)
  • 20 g rolled oats
  • 50 g brown sugar (for apples)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon (for cheesecake)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Crush Biscoff cookies and mix with melted butter. Press into springform pan and bake for 10 minutes.
  2. Combine melted butter, flour, brown sugar, and oats for streusel topping; set aside.
  3. Toss apple slices with brown sugar and cinnamon.
  4. Beat cream cheese until smooth; add sugar, yogurt, vanilla, spices, and eggs until combined.
  5. Layer half the cheesecake filling over the crust, then half the apples; repeat layers and top with streusel.
  6. Bake for 70-85 minutes until slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
