  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth. Set aside.
  2. In another bowl, combine granulated sugar, black cocoa powder, flour, baking powder, and salt. In a separate bowl, cream butter and brown sugar until fluffy, then add egg yolks and vanilla.
  3. Gradually mix dry ingredients into wet ingredients until combined.
  4. Preheat oven to 350°F (175°C). Form cookie dough around small scoops of cheesecake filling, rolling into balls.
  5. Place on parchment-lined baking sheets and bake for 12-15 minutes until slightly set. Cool before serving.
