  • 2 boxes refrigerated pie crust (14.1 oz each)
  • 1 can blueberry pie filling (21 oz)
  • 1 lemon (zested)
  • 2 1/2 cups powdered sugar
  • 1/4 cup lemon juice
  • 1 egg (separated)

Instructions

  1. Preheat your oven to 425°F.
  2. Allow the pie crusts to come to room temperature while you prepare the filling by mixing blueberry pie filling with lemon zest in a bowl.
  3. Cut out 6 circles from each pie crust using a biscuit cutter.
  4. Place 1 tablespoon of filling in the center of each circle, brush edges with egg yolk, fold in half, and seal by pinching edges and crimping with a fork.
