Ingredients

Scale
  • 45 ripe peaches, cored and sliced
  • 1 stick (8 tablespoons) unsalted butter
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 3 tablespoons bourbon
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C). Butter and line a 9-inch cake pan with parchment paper.
  2. Arrange peach wedges in the pan; sprinkle cinnamon over them.
  3. Prepare caramel by combining sugar and water in a saucepan—heat until light brown without stirring. Add bourbon, then pour over peaches.
  4. Beat butter and sugar until fluffy; add eggs one at a time, then mix in vanilla and bourbon.
  5. Whisk dry ingredients together, then combine with wet ingredients until just mixed.
  6. Pour batter over peaches and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool for at least 15 minutes before inverting onto a plate.
