  • 1 cup cold unsalted butter
  • 2 ⅔ cups all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tablespoon apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries, hulled and quartered
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon fine sea salt
  • 23 tablespoons Turbinado sugar (optional)

Instructions

  1. For the crust, melt cold butter in a saucepan over medium heat until golden brown. Let cool.
  2. In a mixing bowl, whisk together flour and salt. Add cooled brown butter and mix until crumbly.
  3. Combine water and vinegar with an egg; add to flour mixture to form dough. Chill for at least one hour.
  4. Preheat oven to 425°F (220°C). Roll out one disk of dough for the bottom crust and place it in a baking dish.
  5. For the filling, combine sliced peaches, strawberries, sugar, cornstarch, lemon juice, and zest in a bowl; toss gently.
  6. Fill crust with fruit mixture and roll out second disk for the top crust. Seal edges and cut slits for steam.
  7. Bake for about 70 minutes until crust is golden brown; let cool before serving.
