Ingredients

Scale
  • 34 large straight carrots (about 2 cups of ribbons)
  • 1 Tbsp ghee or butter
  • 1/2 tsp fresh rosemary, minced
  • 1/2 tsp fresh parsley, minced
  • 1/4 tsp salt

Instructions

  1. Wash the carrots thoroughly. Use a vegetable peeler to create long ribbons from each carrot by peeling along its length.
  2. In a saucepan, bring 1 inch of water to a boil. Place the carrot ribbons in a steamer basket or metal colander inside the saucepan and cover. Steam for about 3 minutes until crisp-tender.
  3. While steaming, mix ghee or butter with minced rosemary, parsley, and salt in a small bowl.
  4. Once the carrots are steamed, transfer them to the bowl with the sauce and toss gently to coat evenly.
