  • 4 cups beef broth
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 cup diced potatoes
  • 1 cup heavy cream or half-and-half
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add diced onion and minced garlic; sauté until soft.
  3. Pour in the beef broth, diced tomatoes (with juice), corn, black beans, and potatoes. Stir well.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper. Bring to a boil then reduce heat to simmer for about 20 minutes.
  5. Slowly stir in heavy cream and shredded cheddar cheese; heat through for another 5 minutes.
  6. Serve hot topped with green onions and crushed tortilla chips.
