Ingredients

  • Gnocchi (500g)
  • Olive oil (2 tablespoons)
  • Onion (1 medium, chopped)
  • Garlic (3 cloves, minced)
  • Crushed tomatoes (28 oz can)
  • Tomato paste (2 tablespoons)
  • Heavy cream (1 cup)
  • Fresh spinach (5 oz)
  • Grated Parmesan cheese (1/2 cup)
  • Dried oregano (1 teaspoon)
  • Dried basil (1 teaspoon)
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Boil salted water in a large pot and cook gnocchi until they float; drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté chopped onion until softened.
  3. Add minced garlic and tomato paste; cook briefly until fragrant.
  4. Stir in crushed tomatoes along with dried herbs, salt, and pepper; simmer for 15–30 minutes.
  5. Remove from heat, stir in heavy cream and Parmesan until smooth.
  6. Add fresh spinach until wilted.
  7. Combine cooked gnocchi with the sauce, toss gently to coat.
  8. Serve hot with extra Parmesan if desired.
