Crockpot Spicy Queso Beef Chili is a comforting and hearty dish perfect for chilly evenings or gatherings. This flavorful chili combines ground beef with an array of spices, creamy cheeses, and vibrant toppings, creating a satisfying meal that’s easy to prepare in a slow cooker.

  • 2 pounds ground beef (or ground turkey/chicken)
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (28 ounce) crushed fire-roasted tomatoes
  • 1 can (8 ounce) tomato paste
  • 1 can (4 ounce) diced green chilies
  • 1 can mixed chili beans, drained
  • 3 tablespoons salted butter
  • 1/3 cup hot sauce
  • 2 bay leaves
  • Salt to taste
  • 23 cups chicken or beef broth
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt for serving

Instructions

  1. Chop onions and poblano peppers finely.
  2. In a skillet over medium heat, brown the ground beef; drain excess fat.
  3. Transfer cooked meat to the crockpot and add all chopped vegetables, spices, hot sauce, butter, bay leaves, and broth. Stir well.
  4. Set the crockpot on low heat and cook for approximately 120 minutes, stirring occasionally if possible.
  5. About 15 minutes before serving, mix in cream cheese until melted, then stir in shredded cheddar until creamy.
