  • 12 oz pasta (penne or fusilli)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, heat the olive oil and sauté minced garlic and chopped red onion until fragrant.
  3. Add halved cherry tomatoes and sliced Kalamata olives to the skillet. Stir in lemon juice, lemon zest, oregano, salt, and pepper; cook for about 5 minutes until tomatoes soften slightly.
  4. Toss the drained pasta into the skillet with the tomato mixture. Mix gently, adding reserved pasta water as needed for sauce consistency.
  5. Remove from heat and fold in crumbled feta cheese before serving warm.
