  • 1 cup instant oats
  • ¾ cup whole wheat flour (or gluten-free flour)
  • 1 ½ tsp ground cinnamon
  • 1 large egg
  • ¼ cup pure maple syrup
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, whisk together oats, flour, cinnamon, baking powder, and salt.
  2. In another bowl, mix melted coconut oil (or butter), egg, almond extract, maple syrup, and almond milk until combined.
  3. Gradually add dry ingredients to wet mixture; fold in diced peaches.
  4. Chill dough for 30 minutes. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  5. Scoop dough onto prepared sheet, flatten slightly, and bake for 9-12 minutes until lightly golden.
  6. Cool on the pan for 10 minutes before transferring to a wire rack.
