  • 1¾ cups Clear Jel (cook-type)
  • 5¼ cups peach juice or water

  • 1½ teaspoons ground cinnamon (optional)
  • ½ teaspoon ground nutmeg (optional)

Instructions

  1. Prepare jars by washing and sterilizing them; keep warm until ready to fill.
  2. Blanch peaches in boiling water for 30–60 seconds, then transfer to ice water. Peel, pit, and slice.
  3. In a large pot, combine sugar and Clear Jel; gradually stir in cold water and peach juice. Cook over medium-high heat until thickened.
  4. Add lemon juice and spices; boil for an additional minute.
  5. Gently fold in peach slices; bring back to a boil while stirring.
  6. Fill warm jars with the hot mixture, leaving about 1 inch of headspace. Seal with lids and bands.
  7. Process jars in a boiling water bath for about 30 minutes (adjust for altitude).
  8. Allow jars to cool undisturbed for 12–24 hours before checking seals and storing.
