  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for filling texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in one egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until a dough forms.
  5. Roll the dough into small balls (about 1 inch), shape them into ovals, and press with a fork to create a crosshatch pattern. Sprinkle tops lightly with granulated sugar.
  6. Bake for about 8–10 minutes or until lightly golden. Allow cooling on a wire rack.
  7. For the filling, beat together additional peanut butter and butter until smooth; mix in powdered sugar and vanilla extract, adjusting texture with milk if needed.
  8. Once cooled, spread filling on one cookie half and top with another to create sandwiches.
