  • 2 pounds ground beef
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup celery, chopped
  • 1 jalapeno, finely chopped
  • 4 cloves minced garlic
  • 6 slices turkey bacon
  • 14.5 ounces diced tomatoes
  • 3 ounces tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon oregano
  • 2 teaspoons paprika
  • 1 cup bone broth
  • Salt and pepper to taste
  • Shredded cheddar cheese for topping

Instructions

  1. In a skillet over medium-high heat, cook turkey bacon until crispy. Drain excess fat but leave some for flavor.
  2. Add onion, celery, and bell pepper to the skillet; sauté until crisp-tender. Mix in ground beef and cook until browned.
  3. Stir in jalapeno and garlic; cook for one minute. Add chili powder, cumin, oregano, and paprika; mix well.
  4. Chop cooked turkey bacon and return it to the skillet. Reduce heat to low; stir in diced tomatoes, tomato paste, salt, and pepper.
  5. Pour in bone broth and simmer uncovered for about 20 minutes. Serve hot topped with shredded cheddar cheese.
