  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil, stirring until a dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth. Place in an oiled bowl, cover with a towel, and let it rise for 1 to 1.5 hours.
  4. Preheat your oven to 475°F (245°C) with your pizza stone or baking sheet inside.
  5. Roll out the dough into a thin round shape (about 12 inches). Transfer to parchment paper.
  6. Mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl. Spread over the dough.
  7. Sprinkle fresh thyme on top and bake for 10-12 minutes until golden brown.
  8. Drizzle with olive oil and honey before serving.
