  • 375 g cooking apples (e.g., Bramleys)
  • 375 g eating apples (e.g., russets)
  • 90 g butter (divided)
  • 60 g caster sugar (divided)
  • Grated rind of 1 lemon
  • 45 g plain flour
  • 500 ml whole milk
  • 3 large egg yolks
  • 1½ teaspoons vanilla bean paste or extract
  • 60 g demerara sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Peel, core, and slice both types of apples thinly.
  2. In a saucepan over medium heat, melt 45 g of butter. Add the cooking apples, 60 g caster sugar, and lemon rind. Cook until softened (5-7 minutes). Remove from heat.
  3. In another saucepan, melt the remaining 45 g of butter over low heat. Stir in plain flour until combined. Gradually whisk in whole milk until thickened.
  4. Remove from heat; cool slightly before whisking in egg yolks and vanilla until smooth.
  5. In a baking dish, layer the cooked apple mixture first, then pour custard over evenly.
  6. Mix demerara sugar with cinnamon and sprinkle on top before baking at 180°C (350°F) for about 20 minutes until golden brown.
