  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a bowl, mix the flour, oats, brown sugar, baking soda, and salt. Stir in the melted butter until combined.
  3. Press about two-thirds of the mixture into the bottom of the baking dish to form a base layer.
  4. In another bowl, whisk together the pumpkin puree, sugars, eggs, pumpkin pie spice, and vanilla until smooth. Pour this over the base layer.
  5. Crumble the remaining oat mixture on top and add optional walnuts if desired.
  6. Bake for 30–35 minutes until golden brown and set in the center. Allow to cool completely before slicing.
