  • 1/2 cup light brown sugar
  • 1 egg
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup almond flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together almond butter, brown sugar, pumpkin puree, vanilla extract, and egg until well combined.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  4. Gently fold in chocolate chips and a few vegan marshmallows.
  5. Scoop dough onto the lined baking sheet and place extra chocolate chips on top if desired.
  6. Bake for 10-12 minutes until lightly golden. Let cool slightly before enjoying.
