  • 1.5 lb raw shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 1/2 cup chopped onion
  • 5 cloves garlic (minced)
  • 1.5 cups cooked corn kernels
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • Juice of 2 small limes
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet over medium heat, melt olive oil and butter. Add chopped onion and sauté until translucent (3–4 minutes). Stir in minced garlic and cook for an additional minute.
  2. Season shrimp with chili powder and salt; add to the skillet and cook until pink and opaque (3–4 minutes).
  3. Stir in cooked corn and smoked paprika; heat through for about 2 minutes.
  4. Gradually pour in half-and-half while stirring until slightly thickened (2–3 minutes).
  5. Fold in half of the crumbled feta cheese and squeeze lime juice into the pan.
  6. Remove from heat, top with remaining feta cheese and fresh cilantro before serving.
