  • 1 cup unsalted butter (cold)
  • 1/4 cup ice water (more as needed)
  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 egg
  • 1 tablespoon milk
  • whipped cream

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Add ice water and lemon juice gradually until dough forms. Chill for at least 30 minutes.
  2. Boil peeled and chopped sweet potatoes in salted water until tender (15–20 minutes). Drain and mash until smooth.
  3. In a bowl, beat softened butter and dark brown sugar until creamy. Mix in eggs one at a time, then add mashed sweet potatoes and spices along with evaporated milk.
  4. Preheat oven to 350°F (175°C). Roll out chilled dough and fit into a pie dish. Pour filling into the crust.
  5. Brush edges with egg wash (beaten egg mixed with milk) and bake for about 90 minutes or until set.
