  • 3 ancho peppers
  • 3 pasilla peppers
  • 2.5 pounds beef chuck (cut into cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped; optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water (+ more as needed)
  • 2 tablespoons masa harina
  • 1 tablespoon brown sugar

Instructions

  1. Toast the dried peppers in a dry pan for about 2 minutes per side, then soak in hot water for 20 minutes until soft.
  2. Blend the soaked peppers with salt and some soaking water until smooth; set aside.
  3. In a large bowl, season cubed beef with cumin, salt, and pepper.
  4. Heat olive oil in a pot; sear the beef on all sides for about 6-7 minutes before removing it from the pot.
  5. Add chopped onions and jalapeños to the pot; cook for about 5 minutes, then stir in minced garlic for another minute.
  6. Return seared beef to the pot along with the chili paste; cook together for 2-3 minutes.
  7. Stir in beef stock, water, brown sugar, and masa harina; bring to a boil.
  8. Reduce heat, cover, and simmer for about 2 hours until beef is tender.
