  • ½ pound turkey strips
  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear
  • 1 lemon
  • ½ cup parsley
  • Freshly ground black pepper

Instructions

  1. Peel, slice, and dice the pear. Toss with lemon juice to prevent browning; set aside.
  2. In a large skillet over medium heat, cook the diced turkey strips until golden brown. Transfer to a paper towel-lined plate.
  3. In the same skillet, sauté shallots for about one minute until softened. Stir in Dijon mustard.
  4. Add frozen peas and prepared pears; mix well and heat for five minutes.
  5. Fold in half of the turkey strips along with parsley and black pepper to taste.
  6. Serve in a large bowl, topped with remaining turkey strips and lemon zest.
