  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 60ml sunflower oil
  • 210g dairy-free block butter for frosting
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Ground Oreo crumbs for decoration

Instructions

  1. Preheat your oven to 180°C (350°F) and line a cupcake tray with liners.
  2. In a bowl, mix dairy-free milk with apple cider vinegar and let it curdle for about 5 minutes.
  3. In another bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Combine sunflower oil with the milk mixture; then gradually mix it into the dry ingredients until just blended.
  5. Fill each cupcake liner two-thirds full and bake for 20-25 minutes or until a toothpick comes out clean.
  6. While cooling, beat dairy-free butter and icing sugar until fluffy; add aquafaba to achieve desired consistency.
  7. Once cooled, frost the cupcakes generously, sprinkle ground Oreo crumbs on top, drizzle melted dairy-free dark chocolate, and decorate with white chocolate buttons and whole Oreos to create bat designs.
